Broccoli Cheddar Soup

I have been on the hunt for the perfect broccoli soup for a very long time. 

I’ve tried recipe after recipe and they always turn out to soup-y or bland. I guess I’m just picky! A couple weeks ago I was craving soup and I thought of broccoli soup… thick, creamy and rich. You know, the kind I always imagine in my head.

So I decided to try creating my own recipe. It was almost perfect, I just didn’t love the texture. So I tried again and tweaked a few things. Since then I have made this soup 2 more times. Yes, we’ve had a lot of broccoli soup lately. But I wanted to make sure that I got this recipe right.

When it comes to broccoli soup, you definitely need cheese to flavor it up. And not just any cheese. I love this soup with sharp cheddar cheese.

Now don’t be alarmed by the recipe… I give you fair warning that this is comfort food. It tastes good and fattening because it is.

Thick, creamy and rich Cheesy Broccoli Soup. This is hearty comfort food.
Serves: 8
Ingredients
  • ½ cup butter
  • ¼ cup diced onion
  • ¾ cup shredded carrots
  • ¼ cup flour
  • 2 tsp garlic
  • 1½ tsp salt
  • ½ tsp black pepper
  • 1 tsp ground mustard
  • 1 tsp paprika
  • 2 tbsp parsley
  • ¼ tsp sage
  • a dash of cayenne pepper
  • 2 cubes chicken boullion
  • 1 cup whipping cream
  • 8 cups milk
  • 3 potatoes diced and cooked
  • 2 heads of broccoli chopped
  • 2 cups cheddar cheese
Instructions
  1. Melt butter in a big saucepan, add onion, carrots and saute for 5 minutes.
  2. Add the next 10 ingredients... add all the spices first and then the flour. Stir until you've formed a nice roux.
  3. Add your whipping cream and whisk until the majority of the clumps are done.
  4. Pour the milk, broccoli and cooked potatoes in and let it heat all the way through.
  5. Once the broccoli is cooked, add a little bit of cheese at a time and let it melt while stirring continuously.
  6. Serve with warm rolls and a salad for the perfect meal.
  7. *I generally use heaping teaspoons in my spice measurements because I like lots of flavor.

    Yum! Broccoli cheese soup seems like it should be plenty easy to make, but it they fall flat more often than not. This looks amazing.

      I know! I have tried SO many recipes before figuring this one out! I think it just comes down to adding good seasoning, lots of cheese and lots of broccoli!
