Corn and Cauliflower Chowder

Corn and Cauliflower Chowder–My new obsession! I’m addicted to this incredible creamy, cheesy soup that’s filled with veggies and so good!

This soup fits perfectly with my current meal plan because its low carb and Add a little bacon and everything is about a million times better, right!?

Corn and Cauliflower Chowder

The really neat thing about this soup is that once the cauliflower is cooked, you can’t even tell what it is. Which is a good thing for little kids and for me. Since I don’t really like raw cauliflower all that much, its surprising how amazing this soup is! This is probably my new favorite soup, ever.

We added a little tabasco sauce to our soup to give it a little tangy flavor! Oh boy!

Corn and Cauliflower Chowder--My new obsession! I'm addicted to this incredible creamy, cheesy soup that's filled with veggies and so good!
Ingredients
  • 2 tbsp butter
  • 2 tsp garlic
  • 3 cups cauliflower chopped
  • ¼ cup diced red onion
  • 1 cup corn
  • 1 cup matchstick carrots
  • 1 cup diced celery
  • ¼ cup flour
  • 2 chicken bouillon
  • 3 cups water
  • 3 cups milk
  • 2 tsp salt
  • 2 tbsp parsley
  • 2 tbsp lemon
  • Tabasco sauce
  • cooked bacon
  • grated cheese
  • green onions
Instructions
  1. Combine all the veggies with butter and garlic and saute for 6-8 minutes.
  2. Add flour and mix thoroughly. Add bouillon, water and milk and cook down for 5-10 minutes. Add lemon, parsley, salt and pepper to taste.
  3. Top with cheese, bacon, green onions and a dash of Tabasco sauce! Yum!

    I was reading through your Corn and Cauliflower Chowder recipe and I didn’t see corn listed as one of the ingredients. How much corn is needed in the recipe? It sounds so good and I’d like to make it.
