CREAMY TURKEY NOODLE SOUP

December 16, 2015 by Carisa

Turkey Noodle Soup Recipe

Last Christmas, my whole family got sick with the nasty flu. It was awful. All of our celebration plans went out the door because we were all so sick. When some friends and neighbors found out, we had about 4 different batches of turkey noodle soup.

I love that we had so many sweet people there to help us out, but that was a lot of noodle soup to handle! I guess everyone knows the healing power of Turkey Noodle Soup!!

Creamy Lemon Turkey Noodle Soup

This is the best Turkey Noodle Soup I have ever had. It is so creamy and flavorful, I could just eat it all up!

Ingredients
  • 3 tablespoons butter
  • 1 cup sliced celery
  • 2 cups sliced carrot (about 2 medium)
  • 1 medium onion, chopped
  • 1 tsp garlic
  • 1 tsp salt
  • 3 tablespoons all-purpose flour
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons chopped fresh parsley
  • 2 cups shredded turkey (or chicken)
  • 3 tablespoons fresh lemon juice
  • parmesan cheese
Instructions
  1. Melt butter in a pot, add celery, carrots, onion and garlic, cook until tender. Add flour and cook 3 minutes, stirring frequently. Gradually mix in chicken broth. Bring soup to simmer, stirring frequently.
  2. Add cream and chopped parsley and simmer 5 minutes. Add turkey or chicken and simmer until cooked through, about 5 minutes.
  3. Cook egg noodles separate (we like the skinny noodles). Mix in cooked pasta and simmer 2 minutes. Mix in lemon juice; season to taste with salt and pepper. Top with parmesan cheese and serve with your favorite grilled cheese.

My kids really love this soup, too. It’s one of the easiest ways to get them to eat cooked carrots. I think their favorite part is the noodles.

The best Turkey Noodle Soup Recipe

We like to pair this soup with a delicious grilled cheese. I always add mustard to my grilled cheese–but I’ve been told that is strange. Ha ha!

Turkey Noodle Soup with Special Grilled Cheese

What really makes it special is making the grilled cheese in the shape of a heart. The heart shaped grilled cheese sandwich is the perfect touch to show your love for your littles.
