Melt butter in a pot, add celery, carrots, onion and garlic, cook until tender. Add flour and cook 3 minutes, stirring frequently. Gradually mix in chicken broth. Bring soup to simmer, stirring frequently.
Add cream and chopped parsley and simmer 5 minutes. Add turkey or chicken and simmer until cooked through, about 5 minutes.
Cook egg noodles separate (we like the skinny noodles). Mix in cooked pasta and simmer 2 minutes. Mix in lemon juice; season to taste with salt and pepper. Top with parmesan cheese and serve with your favorite grilled cheese.
