BAKED SWEET POTATO AND PINEAPPLE SIDE

A sweet and healthy side dish with a Caribbean flare! You'll love this Baked Sweet Potato and Pineapple dish!
Ingredients
  • 1 large or 2 medium sweet potatoes
  • ¼ cup sliced sweet onion
  • 1 cup diced pineapple
  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • 1 tsp black pepper
  • 1 tsp minced garlic
  • 1 tsp rosemary
Instructions
  1. Peel and dice sweet potatoes, onion and pineapple, mix and place in an oven safe dish.
  2. Drizzle olive oil and balsamic vinegar over medley. Sprinkle with rosemary, black pepper and garlic.
  3. Roast at 425 degrees for about 40 minutes or until potatoes start to brown. The time is different with each oven, check your potatoes every 15 minutes or so. Turn occasionally.
