SPICY JERK CHICKEN
 
A tasty and healthy dinner full of caribbean flavor.
Ingredients
  • 2 tsp minced garlic
  • 5 green onions
  • ½ tsp thyme
  • 1 habenero
  • 1 tbsp ginger
  • 3 tbsp white vinegar
  • 1 tbsp water
  • 3 tbsp brown sugar
  • ½ tsp allspice
  • ¼ tsp nutmeg
  • 1 tsp salt
  • 3 chicken breasts sliced
  • Coleslaw:
  • ½ red cabbage
  • ½ cup mango
  • ½ cup pineapple
  • 1 red bell pepper
  • 3 green onions
  • 1 tbsp fresh cilantro
  • Dressing:
  • 3 tbsp honey
  • 3 tbsp lime
  • 1 tbsp orange juice
  • 3 tbsp plain yogurt
  • 1 tsp salt
  • 1 tsp dijon mustard
Instructions
  1. Combine garlic, green onions, thyme, habanero chile (seeded), ginger, white vinegar, water, brown sugar, allspice, salt and nutmeg into a blender or food processor and pulse into a sauce.
  2. Grill chicken. Either marinate the protein in jerk seasoning sauce before grilling or brush on top afterwards before serving. Or both! You only need a couple tablepoons to marinate.
  3. In a medium bowl, slice and chop half a red cabbage, peel and slice mango and pineapple, thinly sliced red pepper and green onion. Mix. Combine dressing ingredients, toss with slaw and refrigerate until ready to serve.
