SUMMER BRUSCHETTA

A perfect summer snack that is easy to make and super good for you! This Bruschetta is unique and delicious!!
Ingredients
  • 4 ripe roma tomatoes
  • ½ yellow bell pepper
  • 1 Tbsp olive oil
  • 1 tsp garlic
  • 1 teaspoon fine sea salt
  • ½ tsp black pepper
  • 1 heaping tsp basil or a small handful of fresh basil chopped
  • French bread or your favorite bread sliced
  • Balsamic Glaze:
  • ½ cup balsamic vinegar
  • 2 Tbsp sugar
  • 1 tsp fine sea salt
  • ½ tsp ground black pepper
Instructions
  1. For the Bruschetta mixture dice your tomato and bell pepper! Combine with olive oil and seasoning. Refrigerate until ready to top the bread.
  2. Prepare the glaze by combining all the ingredients in a saucepan. After about 5 minutes on medium heat it should start to thicken. Remove from heat when it starts to thicken. It will thicken even more once it is removed from the heat. Set aside until ready to serve.
  3. Slice your bread and brush with a little olive oil and garlic. Toast for just a few minutes (watch it closely) in the oven.
  4. Top bread with bruschetta mixture and glaze. Serve immediately
