BANANA FUDGE OWL CUPCAKES

Delicious, sweet and fudge-y cupcakes that are perfect for those special occasions. Topped off with some cute decorations to make the most adorable owl!
Ingredients
  • 1 box chocolate cake mix
  • 1 cup plain yogurt
  • 3 eggs
  • ¼ cup coconut oil
  • 1 very ripe banana
  • 1 teaspoon vanilla
  • For the Ganache:
  • ¾ cup semisweet chocolate chips
  • 2-4 Tbsp milk
  • 1 Tbsp coconut oil
Instructions
  1. Preheat the oven to 350 and fill your cupcake tins with liners. You can use mini or regular size cupcake tins!
  2. Combine all the ingredients for the cupcakes and beat for 30 seconds, scrape the edges of the mixer. Beat for another 2-3 minutes on high speed!
  3. Spoon the batter into the cupcake tins filling each up about ¾ of the way.
  4. Bake for 8-10 minutes for mini cupcakes and 18-20 minutes for regular sized cupcakes! The tops should look a little crackly and spring back.
  5. For the ganache, place all the ingredients in a microwave safe bowl and microwave for 30 seconds. Stir and repeat until thoroughly combined. Let sit until it is the correct consistency. It should thicken up after sitting for a couple minutes.
  6. After the cupcakes have cooled, dip the top of the cupcake into the ganache and then let them sit again until the ganache is set.
