PEANUT BUTTER & JELLY ROLLS

Peanut Butter and Jelly Rolls are the perfect breakfast or dessert! They are light, fluffy and full of childhood flavors.
Ingredients
  • 8-9 cups flour
  • 1 Tbs. yeast
  • ½ cup dry milk
  • 2 cups water
  • ⅔ cup margarine
  • 2 tsp. salt
  • 4 eggs
  • ⅔ cup sugar
  • ½ cup jelly
  • 2 tsp lemon
  • For the Peanut Butter Frosting:
  • 2 cups powdered sugar
  • 1 tsp vanilla
  • ½ cup peanut butter
  • 4 oz cream cheese
Instructions
  1. In a large mixer bowl combine 2 cups of flour, yeast, sugar, salt, and dry milk.
  2. Add warm water and melted butter, stirring constantly. Add eggs.
  3. Beat together, knead in as much remaining flour to make a moderate stiff dough that is smooth and elastic.
  4. Cover, and let rise till double.
  5. Divide into two equal parts. Roll out and spread butter on top. Combine jelly and lemon and spread on top.
  6. Roll dough into a log shape and use a knife or floss to cut ¼-1/2 inch rolls and place them in the pan. Leave a little space so that they can rise again.
  7. Let rise and bake at 375 F 20-25 minutes. Watch them closely because they can go from not quite done to over done in less than a minute.
  8. Prepare frosting by mixing all the ingredients on high speed until light and fluffy! Add milk if too thick. Refrigerate.
  9. Let the rolls cool a bit and then drizzle the frosting over them. If its still warm the frosting will melt slightly and look divine. For a healthier option, just spread peanut butter over the top.
