CARROT CAKE
 
A beautiful and traditional carrot cake is perfect for any celebration including birthdays, Easter, etc. Make sure to top it off with cream cheese frosting!
Ingredients
  • 2 cups flour
  • 2 cups sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 3 cups shredded carrots
  • 1 cup cooking oil
  • 4 eggs
Instructions
  1. Grease and lightly four a baking pan.
  2. In a mixer bowl combine the first six ingredients.
  3. Add next 3 ingredients, beating with electric mixer till combined.
  4. Beat on medium speed for 2 minutes.
  5. Turn into pan.
  6. Bake at 350 F for 50-60 minutes (or until a knife inserted in the middle comes out clean). Pull it out and let it cool for 10 minutes or so. Remove from pan and cool on wire rack.
  7. Frost with Cream Cheese Frosting.
