This delicious Green Eggs & Ham Omelet is full of flavor and a great way to pack some needed nutrients into your breakfast!
Ingredients
5 eggs
1 tsp salt
1 tsp parsley
dash of pepper
dash of paprika
1 cup spinach
½ cup grated cheddar cheese
8-12 slices of ham
Instructions
In a blender, add your eggs, salt, parsley, pepper and paprika. Add the spinach too! Blend it until well combined and there are no large leafy green chunks.
Heat a small non-stick frying pan to about medium heat. Butter the pan lightly right before adding the egg mixture.
Pour ¼ cup of the egg mixture into the frying pan (or enough to coat the bottom of the pan).
Let sit for a minute and then use a spatula to go around the edges and separate them from the pan.
When the egg is all settled, use your spatula to flip the omelet. Immediately sprinkle a little cheese on so that it will start to melt.
Add a layer of ham slices (2-3 per omelet) and a little more cheese. Then roll it up!
Place on a plate and sprinkle with cheese and if desired a little more paprika.
