PUMPKIN WAFFLES WITH PEANUT BUTTER MAPLE SYRUP

A great Fall pumpkin waffle recipe with a delicious creamy peanut butter maple syrup!
Ingredients
  • 2 cups flour
  • 2 Tbs baking powder
  • 1 Tbs cinnamon
  • 1 Tbs sugar
  • ½ tsp nutmeg
  • ¼ tsp pumpkin pie spice
  • ¼ tsp salt
  • 4 beaten egg yolks
  • 4 egg whites
  • 2 cups milk
  • 1 cup pumpkin
  • ¾ cup melted butter
  • 1 Tbs vanilla
  • For the syrup
  • 1½ cup water
  • 1 cup brown sugar
  • ½ cup peanut butter
  • 1 tsp maple extract
Instructions
  1. Mix the dry ingredients together--flour, baking powder, cinnamon, sugar, nutmeg, pumpkin pie spice and salt.
  2. In a separate bowl mix the beaten egg yolks, pumpkin, milk, melted butter and vanilla.
  3. Combine wet and dry ingredients, mix until just combined.
  4. Take the egg whites and beat with a mixer until they form peaks. Fold the egg whites into batter with a spatula.
  5. Pour into waffle iron and cook!
  6. For the syrup, combine water, brown sugar, peanut butter in a sauce pan. Mix until there are no peanut butter chunks and it is smooth.
  7. Bring to a boil and let boil for 5-6 minutes.
  8. Remove from heat and add maple extract. Pour into a serving container after it cools for a minute.
