PUMPKIN WAFFLES WITH PEANUT BUTTER MAPLE SYRUP

- 2 cups flour
- 2 Tbs baking powder
- 1 Tbs cinnamon
- 1 Tbs sugar
- ½ tsp nutmeg
- ¼ tsp pumpkin pie spice
- ¼ tsp salt
- 4 beaten egg yolks
- 4 egg whites
- 2 cups milk
- 1 cup pumpkin
- ¾ cup melted butter
- 1 Tbs vanilla
- For the syrup
- 1½ cup water
- 1 cup brown sugar
- ½ cup peanut butter
- 1 tsp maple extract
- Mix the dry ingredients together--flour, baking powder, cinnamon, sugar, nutmeg, pumpkin pie spice and salt.
- In a separate bowl mix the beaten egg yolks, pumpkin, milk, melted butter and vanilla.
- Combine wet and dry ingredients, mix until just combined.
- Take the egg whites and beat with a mixer until they form peaks. Fold the egg whites into batter with a spatula.
- Pour into waffle iron and cook!
- For the syrup, combine water, brown sugar, peanut butter in a sauce pan. Mix until there are no peanut butter chunks and it is smooth.
- Bring to a boil and let boil for 5-6 minutes.
- Remove from heat and add maple extract. Pour into a serving container after it cools for a minute.
