Cheesy Chicken Broccoli Casserole from Messes to Memories

I love cheese! I don’t think we go a single meal without cheese on most days.

This Cheesy Chicken and Broccoli Casserole is a super easy dish! And its so great because its loaded with broccoli.

It is so delicious and its a great way to get your kids to eat some broccoli. You know, because of the cheesy goodness.

Chicken and Broccoli Casserole from Messes to Memories

Lanae was easily convinced from the beginning… She loves broccoli.

Owen on the other hand has been a little harder to convince that broccoli makes your muscles strong. I was beginning to think it was a lost cause with Owen after I put broccoli in his bowl for the 30th time. Seriously.

I’ve heard that if you keep exposing kids to new foods, they may eventually try them. And then they may or may not like it!

I really hoped that it would eventually work, but I was becoming a little hopeless. However, my patience paid off.

After the first 5 times or so, I stopped trying to get him to try broccoli, I just quietly put it in front of him and then just let him eat what he wanted.

Then one day… he tried it! This delicious Cheesy Chicken and Broccoli Casserole was the answer… Or it was just coincidence! Either way. I love this dish even more now.

CHEESY CHICKEN AND BROCCOLI CASSEROLE

This delicious Cheesy Chicken and Broccoli Casserole is a sure way to get your kids to eat and love veggies.
Serves: 10
Ingredients
  • 2 cups fresh broccoli
  • 2 cups sliced cooked chicken
  • ½ cup grated cheese
  • ½ cup bread crumbs
  • 1 Tbs butter
  • 2 cans cream of chicken
  • ½ cup mayonnaise
  • 1 ½ tsp lemon juice
  • ½ tsp curry powder
  • 1 tsp salt
Instructions
  1. Cook and drain broccoli.
  2. Make sauce by mixing together the soup, mayonnaise, lemon juice, and curry powder.
  3. In a buttered casserole dish, place broccoli on bottom with chicken layered over the top. Cover with the sauce. Sprinkle with cheese and bread crumbs. Dot with butter and paprika, optional.
  4. Bake at 350° for 30 minutes.
  5. Serve over rice.

I like to serve it with brown rice too (when I remember far enough in advance to cook the brown rice). It adds protein and fiber and a whole lot of good whole grains!

    i have been making this recipe for years, but i add cooked cubed potatoes between the broccoli and chicken layers. I also use croutons instead of breadcrumbs and i omit the butter. Delicious one pot casserole for pot-lucks!
