Fluffy Peanut Butter Granola from Messes to Memories

I’ve been in a kind of funk lately. I blame it on the pregnancy hormones, but I’m pretty sure that’s not the real problem. I got sucked into a similar funk last February.

The only thing that helps me feel better lately is chocolate or ice cream. Or chocolate and ice cream.

I think this happens to everyone occasionally… Maybe??

The thing is, chocolate helps for like 15 minutes and then my body crashes–that I blame completely on the pregnancy. So then I need more chocolate. NOT a good cycle.

Homemade Fluffy Peanut Butter Granola from Messes to Memories

I decided that I needed something healthier to resolve those sugar cravings. That’s where the Peanut Butter Granola comes in!

Instead of grabbing the ice cream in the evenings, I grab some granola and my favorite greek yogurt.

It’s a bit healthier and doesn’t cause my body to crash. Which really helps. After I made the granola, I told Scott that he had to help me and he banned all ice cream consumption for a whole week! Sounds harsh, but I really needed him to stand up to me so I could get over my ice cream addiction.

In my moments of weakness, he has been great at supporting me and pouring me a bowl of granola instead of ice cream. I’m super grateful that he’s trying to help me be a little healthier.

FLUFFY PEANUT BUTTER GRANOLA

This Fluffy Peanut Butter Granola has enough sweet to stop the cravings, but is healthier and will provide some real energy to help you get through the day!
Serves: 18 cups
Ingredients
  • 6 cups rolled oats
  • 3 cups mixed nuts roughly chopped
  • 1 cup coconut
  • ¾ cup whole wheat flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 cup peanut butter
  • 1 cup honey
  • ¼ cup canola oil
  • ¼ almond milk
  • 2 tsp vanilla
Instructions
  1. Preheat the oven to 325.
  2. Mix the oats, nuts, coconut, flour, baking powder, salt and cinnamon. Set aside.
  3. Whisk together the peanut butter, honey, oil, milk and vanilla.
  4. Pour the liquids over the oats and stir until everything is coated.
  5. Pour the granola onto 2 big cookie sheets and spread it out evenly. Bake for 10 minutes, stir and return to the oven for another 10-15 minutes. It should be golden.
  6. Remove and stir one more time and then set it on the counter to cool. Let it cool completely before snacking.
  7. After it is cooled, place it in an airtight container.
  8. Serve with your favorite yogurt or milk... or even over ice cream.
